SMOKED SALMON TARAMASALATA WITH CRUDITES

Whiz up in a processor 225 ml smoked salmon, 375 gm Mascarpone, 4 heaped tbsp Greek yoghurt and 1½ tbsp bottled creamed horseradish.

Transfer to a bowl and, if you have won Tatts, top with a layer of Australian salmon caviar.

Serve with crusty bread and a selection of neatly sliced super fresh raw vegies such as celery, radishes, capsicum, whole baby carrots, cherry tomatoes, green or yellow beans, etc., etc. – all cut in batons or sliced.

Iain “Huey” Hewitson (born 4 October 1948 in Otaki), is a New Zealand-born chef, restaurateur, author, and television personality who moved to Australia in 1972.[1] He is best known for his television involvement with Network Ten. He was also the face of supermarket chain BI-LO.
