QUINOA GRANOLA WITH FRESH & DRIED FRUIT (serves 4-6)

Based on a recipe from Gwyneth Paltrow’s cookbook – “It’s All Good”
Toss 3 cups quinoa flakes with ½ cup olive oil and ½ cup honey. Mix thoroughly. Then spread out evenly on a baking sheet and bake in a preheated 180°C FF oven, stirring now and again, until crunchy and golden brown.
Cool and then combine with chopped dried fruit such as apricots, dates and raisins, and any fresh fruit such as figs, strawberries, mango, banana, stone fruit, etc., etc.
Serve with buttermilk or low fat yoghurt alongside.

Iain “Huey” Hewitson (born 4 October 1948 in Otaki), is a New Zealand-born chef, restaurateur, author, and television personality who moved to Australia in 1972.[1] He is best known for his television involvement with Network Ten. He was also the face of supermarket chain BI-LO.
